You record individual files from your online conversation using Zoom (or whatever). Your friend records themselves locally using whatever gear they have (even a smartphone). You record yourself locally with your mic and DAW. The best practice for remote interviews is what's called a 'double-ender' and the platform you use won't make much of a difference.
